M4A (AAC) is Apple's and many voice-recording apps' default; MP3 remains the format the widest range of players, car systems and editing tools accept without question.

Getting a voice memo recorded on an iPhone, or an Apple Music download, into an app or hardware device that only lists MP3 as a supported format.
Worth knowing
AAC (M4A) is already a modern, efficient codec — converting to MP3 mainly buys compatibility, not smaller size or better quality.
